Heart Shaped Cookie

75g unsalted butter
75g soft brown sugar
30 mls honey
Zest of 1 Orange
225g plain flour
1 Tsp bicarbonate of soda
Red and white sugar paste
Heart shaped Cookie Cutter

Preheat oven to 170 c. Place butter, sugar, honey, orange zest and juice in a sauce pan. Heat gently until all the sugar has dissolved. Place all the dry ingredients (except the sugar paste) into a bowl, and add the contents of the saucepan to it.Mix well until it forms firm dough. Place the dough ball into a plastic bag and place in the fridge for an hour.

Roll the dough out on a lightly floured surface until 5mm thick and cut out your heart cookies with the large heart shaped cookie cutter. Place on a greased baking sheet and bake for 10-15 minutes.

Once completely cool, roll out the red sugar paste to a thickness of 3mm, then cut out a heart shape with the same cookie cutter. Moisten one side of the heart shape with water and then carefully place the sugar paste on top of the cookie.( Be careful not to push your fingertips into the sugar paste. ) very lightly roll the rolling pin over the sugar paste to help it adhere to the cookie.
