Bottoms Up Bunny Cupcake Tutorial

Easter holidays are just around the corner! Spring has sprung and it’s a fabulous time to have friends and family over, and wow them with these super cute Easter Bunny Cupcakes! Great to make with the children too!

For 6 cupcakes you will need:

  • Approx 375 g green buttercream icing
  • 1 disposable piping bag
  • 1 wilton multi opening decorating tube (233 grass/fur effect nozzle)
  • Blossom sugarcraft plunger cutter
  • 450 g white sugar paste
  • Pink gel food colour
  • Cocktail sticks
  • Edible glue
  • White/clear sprinkles
  • None stick mat
  • 6 inch rolling pin
  • Palette knife
  • Paintbrush

Step 1

Fit the piping bag with Wilton Multi-Opening Decorating Tube 233 and fill with medium consistency green buttercream icing. Hold the decorating bag 90° straight up; the tip should be 1/8 above the surface of the cupcake.

Step 2

Squeeze bag to form grass. Pull up and away when icing strand is long enough (about 1/2 inch) stop squeezing and pull the tip away. The Grass will be neatly formed only if you stop squeezing before you pull the tip away. For a more natural look sometimes tilt the tip slightly to the right or left, instead of straight up.

Step 3

Roll 50 g of white sugar paste into a ball the size of a golf ball. Cut the ball in half (this makes 2 bunny bottoms). Place cut side down on the top of your green grass iced cupcake.

Step 4

Take a imperial mint size piece of sugar paste,and roll into a ball for the bunny tail. Cover with edible sprinkles and using edible glue, secure in place.

Step 5

Take 2 more pea sized pieces of sugar paste, roll into a ball and flatten with index finger to an oval shape for the bunny feet. Secure in place with edible glue. Repeat the process for remaining cupcakes.

Step 6

Colour your remaining sugar paste a delicate pink colour , by using cocktail stick dipped in a small amount of gel food colour. Add the colour to the sugar paste and work through. Repeat the bunny feet shape process , but use a much smaller size to make bunny’s pink pads and secure in place with edible glue.

Step 7

You may like to roll out some pink sugar paste to approx 2mm and cut out blossom shapes for that spring flower finishing touch!
